Root Source Challenge #19: Skirt Steak

A long, thick belly cut, the skirt steak goes tough past medium-rare. But it’s a perfect cut a quick cook over high heat, so it’s one of our favorite cuts to throw on a really hot grill. It’s also the subject of the Root Source Challenge #19.
Send us your marinades, your herb butters, your fajitas, and your simply grilled skirt steak recipes. Our favorite featuring strip steak will be featured in the Root Source and published on Cookthink.com. The author will also receive a copy of Sizzle, by Julie Biuso. Submissions are due by 12pm EST Tuesday, June 24.
